This hamburger potato soup is so delicious! It’s perfectly thick and creamy, and I love having it on these cold winter days.

This soup is super hearty and filling, so it’s perfect when you want to make a soup as a meal (instead of as a side dish).

It’s a really fun soup to dress up just the way you like it. You could make it spicy by adding in some cayenne pepper. You could also sneak in some extra vegetables by stirring in some corn, green beans, kale, or spinach.

Bacon: You can leave the bacon out if you’d like, but I love the extra layer of flavor it adds. If you like bacon cheeseburgers, you’ll probably prefer this soup with the bacon in it.

Ground Beef: Lean ground beef is the best choice for this recipe. You’ll be draining off the excess fat, so starting with a lean ground beef makes that easier.

Onion and Garlic: Both of these aromatics add tons of flavor to the soup while they’re sautéing.

Butter: This is the fat that we’re using to combine with the butter to make a roux. You could use oil instead, but it won’t be as flavorful.

Flour: Flour is the thickener in this soup. It combines with the melted butter, and then that roux coats the ground beef and potatoes before the liquids are added. This allows the flour to mix with the liquids without clumping up.

Spices: Onion powder, dried parsley, fine sea salt, dried basil, and ground black pepper are the spices and herbs we’re using in this dish. Feel free to play with them to get the flavor profile you like best.

Potatoes: Russet potatoes are perfect for this soup because we want them to melt a little bit. The starch from the soft edges incorporates into the soup and helps make it super creamy. You could swap this for frozen hash brown potatoes if you want something even easier.

Chicken Broth: Chicken broth is half of the base of this soup, and it adds a ton of flavor. You could swap this for beef broth if you prefer.

Milk: Milk makes up the other half of the base of this soup, and it helps make the soup perfectly creamy. If you’re worried that your soup will separate, you can either swap this for half and half, or you can use extra chicken broth, and then melt in cream cheese at the end.

Cheese: Freshly shredded cheddar cheese adds tons of flavor, and makes this soup taste like a cheeseburger soup.

How To Make Classic Hamburger Potato Soup

Start by sautéing the sliced bacon, then remove the bacon from the pot and drain the grease. Add the ground beef to the pot. (See the recipe card below for the full printable instructions.)

Once the ground beef is about halfway finished cooking, add in the onions and stir. When the ground beef is browned and the onions are translucent, add in the butter, then stir in the garlic and spices.

Add in the potatoes and the flour. Stir until the potatoes and ground beef are evenly coated.

Add in the chicken broth and milk, and stir. Simmer until the potatoes are fork tender. Make sure to ONLY simmer – if you bring this to a full boil you run the risk of the milk separating.

What Potatoes Are Best For Soup?

It depends on the type of soup you’re making. If you want the potatoes to hold their shape, a waxy potato is best. If you want a super creamy soup, then russet potatoes are best.

Do I Need To Peel Potatoes For Soup?

It really depends on the flavor profile of the soup. For this recipe, it’s best to peel the skins so that the mouth feel is creamy. If you’re not making a creamy potato soup, then you don’t normally need to peel the potatoes.

Ingredients

  • 6 slices bacon (cut into 1/4 inch slices)
  • 1 pound lean ground beef
  • 1 medium onion (diced, about 1 cup)
  • 1/4 cup butter
  • 2 medium cloves garlic (minced)
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley
  • 1 teaspoon fine sea salt
  • 1 teaspoon dried basil
  • 1/2 teaspoon ground black pepper
  • 2 pounds russet potatoes (diced into 1/2 inch pieces, about 4 cups)
  • 1/2 cup all-purpose flour
  • 3 cups chicken broth
  • 3 cups whole milk
  • 2 cups freshly grated sharp cheddar cheese shredded (plus extra for garnish)*
  • Diced green onions (for garnish)

Instructions

  1. Heat a large Dutch oven over medium-high heat. Once hot, add the bacon and cook for 8 minutes (or until it’s crispy). When it’s finished cooking, remove the bacon from the pot and discard any remaining grease.
  2. Return the pot to the stove over medium-high heat, and add the ground beef to the pot. Cook for 5 minutes, and drain off any grease.
  3. Add in the onions, stir, and cook for 4 minutes (or until the ground beef is browned and the onions are translucent).
  4. Add the butter to the pot and melt. Stir in the garlic, onion powder, dried parsley, fine sea salt, dried basil, and ground black pepper. Saute until aromatic (about 1-2 minutes).
  5. Add in the diced potatoes and flour. Stir to combine (make sure the beef and potatoes are evenly coated with flour).
  6. Pour in the chicken broth and milk, stir to mix, and bring to ONLY a simmer. Turn the heat down so that it’s only simmering, and let it simmer for 10-15 minutes (or until the potatoes are fork tender), stirring frequently. **It’s important to not bring the soup above a simmer, or you run the risk of the milk separating.**
  7. Once the potatoes are cooked through and the soup has thickened, stir in the shredded cheese and bacon pieces. Garnish with extra shredded cheese and green onions, and serve.

Notes

*It’s important to use freshly grated cheddar cheese. Pre-grated cheeses are coated in an anti-caking agent that stops it from melting smoothly.
